    Research was objected to observe characteristic of palembangis crackers in relation with flour formula consisted of tapioca and wheat flour. Experiment was conducted at randomized block design based on two treatments, i.e. flour formula and steaming time, in three replications. Crackers characteristics was represented by volume expansion, spesific volume and consumer's preference test. Formula was treated in four levels of wheat flour substitution i.e. 0, 20, 40, 60 percent, and steaming time was on three levels i.e. 45, 50 and 55 minutes. Result of the experiments show that the wheat flour substitution was given significant effect on cracker volume expansion. It was about 13-24 percent decreasing of crackers volume due to wheat flour substitution until 20 percent, and it would be more 60 percent if the substitution more than 20 percent. The wheat flour substitution had a significant effect on spesific volume of palembangis crackers. Steaming time and its interaction with wheat flour substitution have no signification effect on volume expansion, but it influence significantly on spesific volume. The consumer's preference was variated from normaly to slightly dislike depend on the formula. Wheat flour substitution has significant effect on consumer's preference, but no effect for steaming time. It was sugested that maximum wheat flour substitution is 20 percent combined to steaming time of 45 minutes.
