    Abstract

    The objective of this research was to observe packaging method and relative humidity that suitable for bekasam block during storage. The research used Factorial Randomized Block design with three treatments (packaging method, relative humidity and storage) and three replications. The first treatment was packaging methods (without packaging and packaging by aluminium foil), the second treatment was retative humidity (32,52,75 and 92%) and the third treatment was the storage times (0, 10, 20 and 30 days). The quality parameters measured was moisture content, total acid, peroxide vatue, specific volume, and total ptate count. Sensory evaluation consisted of texture, colour, and flavour with hedonic quality test. Result of experiment had shown moisture content of bekasam block increased at relative humidity 75% dan 92%, decreased at relative humidity 32% and 52%. Total acid was increased in l0 and 20 days and it was decreased on 30 days. Peroxide value and total plate count was increased during storage. Specific vltume was increased at relative humidity 75% and 9226, decreased at relative humidity 37% and 52%. Texture and colour were significantly effected by relative humidity and packaging method but the flavour was not significantly effected by relative humidity and packaging method. The best treatment was storage condition in relative humidity of 52% and packaging by aluminium foil based on chemical characteristic, physical and organoteptic analysis.
